Gingerbread Rice & Seed Crispy Treats
There’s something about ginger and molasses that magically brightens the darkest, coldest days of the year. This warming flavor combination is a staple in holiday classics like gingerbread houses, gingersnap cookies, and our new favorite treat - gingerbread rice & seed crispy treats! These bold, satisfying sweets are incredibly easy to make and enjoy. Follow the recipe below and see(d) for yourself!
Ingredients: (Makes 12 servings)
3 Cups Crispy Rice Cereal
1 1/2 Cups Ginger Cardamom Seed Blend
1 tsp. Cinnamon
1 tsp. Ginger
1/2 tsp. Allspice
1/2 tsp. Cloves
1/4 tsp. Salt
1 Cup Creamy Almond Butter
1/2 Cup Maple Syrup
1/4 Cup Molasses
1 tsp. Vanilla Extract
Line a 9x9 baking pan with parchment paper, leaving a bit of extra paper above the sides of the pan for easy removal after cooling.
In a medium bowl, combine crispy rice cereal and Ginger Cardamom Seed Blend. In a separate bowl, combine spices and salt (if using a salted almond butter, omit the salt from this recipe). Add almond butter, maple syrup and molasses to a small saucepan and stir until well combined. Continue stirring while bringing the mixture to a low simmer. Quickly remove pan from heat, add vanilla extract and spices, and mix well. While warm, pour the wet mixture over the cereal and seeds, stirring well to fully coat all the dry ingredients. Transfer the mixture to your prepared baking pan, spreading it to the edges in an even layer. Try to smooth out the top as much as possible, pressing lightly if needed.
Place the pan in the fridge for at least an hour to set. Once set, remove treats from the pan by gently lifting the edges of the parchment paper and transfer to a cutting board. Cut the treats into 12 equal portions, top with a drizzle of icing if desired, and enjoy!
Store these gingerbread treats in an airtight container for up to one week in the refrigerator, or one month in the freezer.
