Chocolate Peanut Butter Treats
If you’re a Reese’s Peanut Butter Cup lover, these treats are for you! They’re a healthier, more natural version of the popular peanut butter & chocolate candy (and honestly we think they taste better too!). All you need is a few simple ingredients and about an hour to whip these up. It’ll take a fraction of the time to devour them… you’ve been warned!
Ingredients: (Makes 6 servings)
1/2 Cup Creamy Natural Peanut Butter (or other nut/seed butter)
6 Tbsp. Dark Chocolate Seed Blend
2 Tbsp. Maple Syrup
1/4 tsp. Salt
1/2 Cup Dark or Bittersweet Chocolate Chips
Flakey Sea Salt (optional, for topping)
In a small bowl, stir together the peanut butter, Dark Chocolate Seed Blend, maple syrup and salt. The mixture will be thick and have a dough-like consistency. Cover the bowl and transfer to the refrigerator for 20 minutes. After chilling, the mixture should feel like play-dough and easily hold together. Remove from refrigerator and roll into a ball. Place the ball between two sheets of parchment or wax paper and gently flatten with the palm of your hand. Roll the dough with a rolling pin to about 1/4” thickness. Carefully remove the top sheet and cut dough into 12 equally sized pieces (circles, squares, hearts, or any other simple cookie cutter shape will work). Return cut shapes to the refrigerator for another 15 minutes (or 5 minutes in the freezer).
Meanwhile, melt chocolate chips in a small, microwave safe bowl. Heat for 20 seconds, stir well, and heat for another 20 seconds as needed until the chocolate is smooth and spreadable. Use the back of a metal spoon to coat the top of each treat with a layer of chocolate. It will harden quickly once in contact with the chilled “dough”. Cool in the refrigerator for another 10 minutes. Once chocolate is fully set, carefully flip your shapes and coat the other side with the rest of the melted chocolate. Work quickly here so you can add toppings before the chocolate hardens! We love the look and flavor of flakey sea salt on these treats, but crushed peanuts, toffee bits, or a white chocolate drizzle would also make delicious toppings!
Store these Chocolate Peanut Butter Treats in an airtight container. They’ll keep in the refrigerator for 3 weeks, or in the freezer for 3 months… good luck getting them to last that long!
