“Grown Up” Crunch Bars

This recipe is an all-time favorite and probably the most delicious way to enjoy your daily seeds! Don’t let the term “grown up” fool you - these are still chocolate treats that are both sweet and addictive, but they also offer 5g fiber and 4g protein that you won’t find in your average candy bar. We recommend our Dark Chocolate Seed Blend for this recipe, but the Ginger Cardamom Seed Blend would probably work well too!

NOTE: Popped amaranth isn’t sold in every store, but Amaranthy sells it online! If you’d rather try puffing raw amaranth yourself, you can find some tips and tricks here. But be warned, the popping process is MESSY and will probably leave lots of little styrofoam-looking puffs all over your stovetop & floor! If you’re set on popping the amaranth yourself, we recommend doing it before you plan to clean your kitchen. Take it from us, it’s much easier to enjoy these tasty treats when you aren’t stressing about a big clean-up project.

Ingredients: (Makes 12 bars)

  • 1.5 Cups Puffed Amaranth (3/4 Cup raw if puffing yourself)

  • 3/4 Cup Dark Chocolate Seed Blend

  • 1.5 Cups Semi-Sweet Chocolate Chips (40-60% cacao is best)

  • 1.5 Tbsp Coconut Oil

Combine puffed amaranth and Dark Chocolate Seed Blend in a medium bowl. Add semi-sweet chocolate chips and coconut oil to a separate microwave-safe bowl, then heat in 15 second increments until melted. Be sure to stir well in-between microwaving to avoid burning the chocolate chips! Pour liquid chocolate & coconut oil mixture over the puffed amaranth and seed blend then stir well to combine, eliminating any “dry” pockets. Transfer mixture to a baking dish (9x13” or 10x10”) lined with parchment paper and refrigerate for 1-2 hours to set the chocolate. Once firm, remove from fridge and allow to sit for 5 minutes before cutting into 12 equal pieces - cutting right away will be tough and may lead to injury, so try to be patient here!

Now it’s time to enjoy your tasty chocolate treats! After you’ve had our fill, store the leftovers in an airtight container in the refrigerator for up to a week (if you can make them last that long).

If you are Seed Cycling, keep in mind that each bar only contains 1 Tbsp. seed blend following this recipe. You can add more seed blend by replacing some of the puffed amaranth, but the bars will be more dense and less crunchy. Or just enjoy 2 bars per day to get your seeds in - we won’t judge ;)

This recipe can easily fit a range of dietary needs - it’s naturally gluten free, and dairy/sugar free chocolate chips can be used if desired.
