Everything (Minus the Bagel) Snack Bites
These warm, crispy, gooey bites are incredibly simple to make and even easier to eat. Great for a quick snack after school or between meetings, all you need are 3 ingredients, a frying pan, and a bit of patience while they cool…
Ingredients:
1-2 Tortillas (flour, whole wheat, low carb, cauliflower, corn, you pick!)
2 oz. Cream Cheese
2 Tbsp. Everything (Minus the Bagel) Seed Blend (Sunflower & Sesame)
Spread cream cheese in an even layer on the tortilla(s). 2 oz. cream cheese is enough for one burrito size flour tortilla, but might be too much for a single corn tortilla - trust your judgement here and use more tortillas if needed. Sprinkle Everything (Minus the Bagel) Seed Blend evenly over top of the cream cheese and lightly press down with your hand. Then it’s time to roll! Tightly roll up the tortilla(s) and slice into 1-inch pieces.
To crisp up the bites, add1 Tbsp. butter (oil works too) to a frying pan over medium heat. Once hot, place bites in the pan and turn using a fork or tongs every 15 seconds or so to get that crispy brown goodness on all sides. Remove bites from the pan and (try to) wait a few minutes before devouring them - they taste best when the cream cheese has a chance to firm back up a bit.
Aside from being amazingly simple and fantastically delicious, this recipe is super easy to customize! Feeling spicy? Add some chili crunch or chopped jalapeños. Want more protein? Add a few slices of deli meat. Want to cram even more superfood goodness into this snack? Add a layer of baby spinach overtop of the seeds before rolling up your tortilla. The possibilities are truly endless!
This recipe can also fit a range of dietary needs - dairy free cream cheese and butter replacements work well, and you can eliminate gluten by using a corn or cauliflower tortilla.
