Greek Seeds Tzatziki

Tzatziki - hard to say, easy to eat! As a dip, a spread, a dressing, a sauce, a side… this food plays well with others. We love its creamy texture and fresh cucumber flavor, plus the short ingredient list & minimal prep time!

Ingredients:

  • 1/2 English Cucumber (halved lengthwise)

  • 1 Cup Greek Yogurt

  • 1/4 Cup Greek Inspired Seed Blend

  • 1 Clove Garlic (minced)

  • 1 Tbsp. Fresh Dill (minced)

  • 1/2 tsp. Lemon Zest

  • 1 Tbsp. Lemon Juice

  • 1/2 tsp. Sea Salt

Remove seeds from center of each cucumber half with a small spoon (set aside in a small bowl). Shred cucumber on the large holes of a box grater. In a medium bowl combine shredded cucumber, greek yogurt, Greek Inspired Seed Blend, garlic, dill, lemon zest & juice, and salt. Stir together, adding back some cucumber “juice” if needed to reach desired flavor & texture. That’s it - you’ve made Tzatziki!

Serve with pita bread or chips, fresh veggies, steak, salad, gyros, kebabs… the possibilities are endless & delicious.

If you are Seed Cycling, keep in mind that this full recipe only contains 1/4 Cup (4 Tbsp.) of the Greek Inspired seed blend. You may need to supplement with more seeds elsewhere in your day/meal - or just eat a lot of tzatziki ;)

This recipe can easily fit a range of dietary needs - it’s naturally free from gluten, nuts, soy, and eggs, and you can easily substitute a dairy free greek yogurt alternative if desired.
